Awesome Appetizer

My mom and I just hosted a bridal shower this past Sunday. Hopefully I'll get the pictures from my dad soon so I can do a post to show the food spread and decorations - we thought it all turned out really nice. Plus, I think everyone had a good time.

We had some appetizers, small sandwiches, punch, tea, as well as cake and a dessert wine.  One of the favorites of the day was my Mexi-Corn Dip.  I first had this delicious dip at my own bridal shower.  I believe my cousin Amber made it, and ever since then, this has been a huge hit at parties, get-togethers and showers. And as I always say, the best thing about this recipe is how easy it is.  Seriously, all you do is mix the few ingredients together.  So. Easy.

Oh, and sorry there are no pictures, you'll just have to take my word for it that the dip is wonderful.  Enjoy!

Mexi-Corn Dip

Ingredients:
2 cans mexi-corn, drained (located by the canned corn)
1 cup mayo
1 cup sour cream
3 green onions, chopped
1 small can green chilies
1 package Mexican grated (shredded) cheese

Directions:
Mix all ingredients.  Refrigerate.  Best if made the night before.

HAVE A GREAT MEMORIAL WEEKEND!
