Couple good recipes

Hope everyone had a great Halloween.  We did, regardless of the lack of kids stopping by for candy.  Now I have a ton left-over and am regretting buying so much.  Oh well!

I don't have any pictures of either of these recipes, but they are definite must trys. 

Bow-Tie 'Lasagna'
This is a really good and different take on spaghetti or lasagna.  Found it here on Pioneer Woman a long time ago and am just now trying it.  I ended up basically cutting the recipe in half, and we still had leftovers.

Ingredients:
1 pound ground hamburger
5 cups bow tie noodles (I used almost an entire 1 pound bag, but it still wouldn't have been 5 cups)
3 cups spaghetti sauce or pizza sauce (I used 2 cups of spaghetti sauce)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning (or more, make to your taste)
1/2 cup mozzarella cheese
1/2 cup sour cream

Directions:
Fry ground hamburger in small pan.  Meanwhile, cook noodles according to package directions.  After noodles are cooked, drain and drizzle with olive oil.

Mix in your spaghetti sauce.  Then add cooked hamburger, seasonings, cheese and sour cream.  Fold together and allow it all to combine and melt together over low heat for about 5 minutes, or until cheese is melted.

Serve and enjoy!

Turkey and Quinoa Meatloaf
The new craze seems to be quinoa, and we are all aboard on that train. So healthy and there seems to be a ton to do with it. Matt doesn't really like traditional meatloaf all that much (I know, crazy man), so when I found this I thought he might go for it. And he definitely did. It might be a stretch for some of you, but if you're looking for a healthy meal and like meatloaf, then give this a shot. Found it here on allrecipes.com.

Ingredients:
1/4 cup quinoa
1/2 cup water
1 teaspoon olive oil
1 small onion, chopped
1 large clove garlic, chopped
1 (20 oz) package ground turkey
1 tablespoon tomato paste
1/2 to 1 tablespoon hot pepper sauce, BBQ sauce or sweet chili sauce (make to your taste)
2 tablespoons Worcestershire sauce
1 egg
1 1/2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon water
 
Directions:
Bring the quinoa and water to a boil in a saucepan over high heat.  Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes.  Set aside to cool.
 
Preheat oven to 350 degrees.
 
Heat the olive oil in a skillet over medium heat.  Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.  Add the garlic and cook for another minute; remove from heat to cool.
 
Stir the turkey, cooked quinoa, onions, tomato paste, hot sauce, 2 tablespoons Worcestershire, egg, salt and pepper in a large bowl until well combined.  The mixture will be very moist.  Shape into a loaf on a foil-lined baking sheet.  Combine the brown sugar, 2 teaspoons Worcestershire and 1 teaspoon water in a small bowl.  Rub the paste over the top of the meatloaf.
 
Bake in the preheated oven until no longer pink in the center, about 50 minutes.  An instant-read thermometer inserted into the center should read at least 160 degrees.  Let the meatloaf cool about 5 minutes before slicing and serving.
