another weekend down the drain

Such a bad title for this, because we actually had a great weekend.  But due to my lack of creativity and the fact that it's Monday - and I hate Mondays - this is all I've got.

Friday night was spent at home vegging.  We made spinach and feta turkey burgers, a recipe courtesy of Krista.  These were delicious, even without the bun.  I knew we had some buns at home so I didn't pick up any at the store.  Little did I know that the couple packages we did have were both moldy.  Eewww.  Regardless, they were great and made some leftovers for lunches this week.

We headed out bright and early to Lee's Summit on Saturday morning for an organized bike ride.  Our friends Krista and Brian are participating in the MS150 bike ride in September and invited us to join them for this training ride.  It was a beautiful morning, which was wonderful because we ended up biking 50 miles!  That is double the miles I have ever gone.  As you can imagine, I was pretty worthless the rest of the afternoon, just plain exhausted.  But I did manage to clean our disgusting house and make it out to run some errands.  We also treated ourselves to dinner at Barley's Brewhaus.

Sunday was time for relaxing!  We celebrated Dan's birthday (our good family friend) with brunch and a pool party.  The weather was beautiful and lounging next to a private pool wasn't half bad either.  After we got home, I made some delicious cupcakes and we called it an early night.  All in all, a great weekend.

Next up, I'm heading to New York with my girlfriends.  I'm so excited to hang out with my girls and to see where and how our New York friends live and play.  I'm especially excited because I've never been to the East coast.  The trip is the last weekend in August, which is unbelievably only a week away.  I'm sure I'll be coming back home with many memories and stories!
